Atrium Kitchen’s Chef Traci’s signature whiskey-based BBQ sauce took it up a few notches with the addition of Herban Farm’s scotch bonnet peppers. Pacific Northwest’s true cod from Pike Place Fish is the ideal vehicle to carry all this flavor! And to round out the dish, cheesy grits using Beecher’s Flagship Cheddar.

2 pounds of True Cod

1 cup of Grits
1/2 teaspoon Sea Salt
2oz Cheddar Cheese, grated

This complete box includes:
- 2 pounds True Cod
- 1 bottle Whiskey-Bonnet BBQ Sauce
- 1 cup Grits
- ½ teaspoon Sea Salt
- 2 oz. Cheddar Cheese, grated
- 1 bunch Greens, diced
- Butter
- Canola Oil
- Fresh Parsley
- Your package will include one of our favorite seasonings! Picture is not reflective of the actual seasoning you might receive.
Ingredients
Allergens: Soy, Anchovies (in BBQ Sauce), Dairy
Instructions / Storage
- When you receive your package open it up and take a look at the fish. Decide what you are going to eat in the next couple days and put it in the refrigerator. Certain items if properly stored can be placed in your freezer for at least a couple months.
To Serve
Grits
- Add 1 tablespoon butter to frying pan.
- Add 1 bunch greens and diced jalapeno, saute for 8 minutes.
- Remove from pan and set aside.
- Add 3 cups water and ½ teaspoon salt to a pot and bring to a boil.
- Stir in grits and cover.
- Cook for 8-10 minutes.
- Remove from heat and stir in grated cheese and sauteed greens. Keep warm.
Cod
- Sprinkle 1-2 tablespoons of Pike Place Fish spice blend over the fish.
- Gently rub into fish.
- Place 2 teaspoons canola oil in a frying pan.
- Add true cod and gently cook for 5 minutes.
- Add 2 tablespoons Whiskey-Bonnet BBQ Sauce, and turn fish over, adding 2 more tablespoons of sauce over the fish.
- Cover and cook for another 8 minutes, or until fish is opaque and cooked through.
Assembly
- Ladle hot cheesy grits and greens into a shallow bowl.
- Top with fish.
- Serve with additional BBQ sauce and garnish with parsley.

- Orders cannot be shipped to P.O. Boxes, sorry no exceptions.
